Step 1

Place apples in large pot. Split vanilla bean, scrape seeds into pot and add the pod.

Step 2

Add honey, cider, lemon juice, cinnamon stick, allspice & brandy.

Step 3

Simmer, covered until apples are soft but not mushy, about 10 min.

Step 4

Remove vanilla bean and cinnamon stick. Taste, adjust sweetness if necessary, adding brown sugar to taste.

Step 5

Mash lightly leaving some chunks.

Step 6

Serve warm or chilled with or without cream.

Step 7

Freezes well.
