Step 1: Place apples in large pot. Split vanilla bean, scrape seeds into pot and add the pod.
Step 2: Add honey, cider, lemon juice, cinnamon stick, allspice & brandy.
Step 3: Simmer, covered until apples are soft but not mushy, about 10 min.
Step 4: Remove vanilla bean and cinnamon stick. Taste, adjust sweetness if necessary, adding brown sugar to taste.
Step 5: Mash lightly leaving some chunks.
Step 6: Serve warm or chilled with or without cream.
Step 7: Freezes well.
