Step 1

Mince the herbs and the lemon zest.

Step 2

Combine chicken with all remaining ingredients making sure each piece of chicken is evenly covered with the seasoning mixture. Let sit over night in refrigerator.

Step 3

Clean the grill off with a grill brush and a towel. Heat grill on a high setting for 5 minutes.

Step 4

Place chicken on grill, reduce heat to medium and turn the chicken over every 2 minutes. This will insure even cooking.

Step 5

Reduce the heat to low and continue to cook the chicken for another 10 - 15 minutes. Chicken should reach an internal temperature of 160 degrees.

The spices and herbs in this dish made for a really delicious meal. I used a 1 lb piece of pork loin and marinated for about 3 hours then grilled it. I browned it on the flame side then moved it to the non -flame side to finish roasting it. I cooked the pork to 145 and it was very moist and flavorful. Another great keeper from SWT 2019
