Step by Step Method
Step 1
Preheat grill to medium low heat.
Step 2
Butter fly your chicken, by cutting it horizontally. Do not cut all the way through.
Step 3
Sprinkle the inside of the chicken with pepper.
Step 4
Put a piece of cheese in the middle of the chicken breast, where you made the slit. It should look like the chicken breast before you cut it.
Step 5
In a glass bowl melt butter for 8 seconds. Once melted, stir in hot sauce and celery salt.
Step 6
Brush one side of the chicken with hot sauce mixture, and place the hot sauce side down on the grill. Brush more hot sauce on top of chicken.
Step 7
Cook for about 7 minutes.
Step 8
Flip the chicken and brush the remaining hot sauce on the chicken, and cook until no longer pink in the middle, about 5 minutes more. If you use really thick chicken breasts, it may take a little longer.
