Step by Step Method

Step 1

Preheat grill to medium low heat.

Step 2

Butter fly your chicken, by cutting it horizontally. Do not cut all the way through.

Step 3

Sprinkle the inside of the chicken with pepper.

Step 4

Put a piece of cheese in the middle of the chicken breast, where you made the slit. It should look like the chicken breast before you cut it.

Step 5

In a glass bowl melt butter for 8 seconds. Once melted, stir in hot sauce and celery salt.

Step 6

Brush one side of the chicken with hot sauce mixture, and place the hot sauce side down on the grill. Brush more hot sauce on top of chicken.

Step 7

Cook for about 7 minutes.

Step 8

Flip the chicken and brush the remaining hot sauce on the chicken, and cook until no longer pink in the middle, about 5 minutes more. If you use really thick chicken breasts, it may take a little longer.

So sorry, but not really a recipe I'd make again. I love buffalo chicken, love grilled chicken, and thought I'd love this recipe. Not sure why, but something about the flavors here just didn't sit well with me. Made for Best of 2016 tqg game.

The chicken came out so moist...it's really delicious! I used a stick of pepper jack cheese and closed the chicken with picks to prevent the cheese from escaping...I served it with some mexi fries and spicy refried beans...made for "Bill Board" tag game...

This recipe is at least 10 stars! It's amazingly delicious! My whole family loved it and my husband has already suggested for me to make it again. I followed the recipe except that I marinated the chicken breasts overnight in the hot sauce. Once I sliced each breast to create a pocket, I sprinkled black pepper and celery salt, added some melted butter and stuffed sliced mozzarella and grated parmesan. I also sealed the opening with some sturdy toothpicks. I found that the outside of the chicken was cooked and had a lovely char, but I needed to finish them off in the oven for some quick minutes in order to fully cook through until no longer pink. They came out perfectly moist and super delicious. Thank you so much Sheri for sharing a MOST DEFINITE KEEPER!
