"We visit Hatch, NM every year and love their peppers. Even though I'm not a fan of excess heat, I can find my preferred level of heat with that wonderful Hatch chili flavor. Canned green chilis are an acceptable substitute if you can't find authentic Hatch chiles. Serve with chips or veggies or use as a burrito filling"

Step by Step Method
Step 1
Puree Hatch green chiles, jalapenos and juice (in blender or with hand-held immersion blender)
Step 2
Combine refried beans, cream cheese, half of cheddar cheese and sour cream
Step 3
Add chile powder and pureed chile mixture.
Step 4
Pour into an 8x8 baking dish (or equivalent)
Step 5
Top with remaining cheese.
Step 6
Bake at 350F for 20-25 minutes.
Step 7
Garnish with chopped green onions, avocado, cilantro and/or a squeeze of lime juice.
