Ingredients

The ingredients are:
  • 16 ounces refried beans, favorite style
  • 4 ounces cream cheese
  • 1/2 cup sour cream
  • 1 cup hatch green chile - mild, medium or hot
  • 1/4 cup jalapeno, about 1 whole
  • 1 tablespoon lime juice
  • 2 tablespoons of red chile powder - mild, medium or hot
  • 2 cups cheddar cheese, shredded, divided

How to Make

  • Step 1: Puree Hatch green chiles, jalapenos and juice (in blender or with hand-held immersion blender)

  • Step 2: Combine refried beans, cream cheese, half of cheddar cheese and sour cream

  • Step 3: Add chile powder and pureed chile mixture.

  • Step 4: Pour into an 8x8 baking dish (or equivalent)

  • Step 5: Top with remaining cheese.

  • Step 6: Bake at 350F for 20-25 minutes.

  • Step 7: Garnish with chopped green onions, avocado, cilantro and/or a squeeze of lime juice.
