Step by Step Method

Step 1

Over high heat bring a pot of salted water to a boil and add green beans, cooking for 3-5 minutes or until crisp tender; drain and oil under running water.

Step 2

In a bowl combine the beans with the cherry tomatoes.

Step 3

In a small cup or bowl whisk together the olive oil, vinegar and shallots. Stir in the olives, thyme, salt and pepper.

Step 4

Toss the green beans with the dressing.
