Ingredients

The ingredients are:
  • 3/4 pound green beans, trimmed
  • 1 cup cherry tomatoes, halved
  • 1 1/2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 tablespoons shallots, minced
  • 1/2 cup Nicoise olives, pitted and chopped (or substitute kalamata olives)
  • 1/2 teaspoon thyme, fresh and chopped
  • Kosher salt
  • Pepper

How to Make

  • Step 1: Over high heat bring a pot of salted water to a boil and add green beans, cooking for 3-5 minutes or until crisp tender; drain and oil under running water.

  • Step 2: In a bowl combine the beans with the cherry tomatoes.

  • Step 3: In a small cup or bowl whisk together the olive oil, vinegar and shallots. Stir in the olives, thyme, salt and pepper.

  • Step 4: Toss the green beans with the dressing.
