Step 1

Heat oil in covered pot, add onion then brown. add garlic and rice: stir, then add stock and spices. Cover cook 15 minutes.

Step 2

Add spinach and dill; cook 5 more minutes or until rice is cooked.

Step 3

Stir in cheese and lemon juice and zest.

This is a great dish. I got distracted and accidentally caramelized the onions, which turned out to be a happy mistake, since it gave the rice a deeper flavor. We don't like dill, so used fresh oregano from my yard. Loved the "tang" from the lemon and feta cheese.
