  • 1/2 pound spinach, minced (fresh baby spinach)
  • 2 tablespoon dill, fresh minced
  • 1 garlic clove
  • Lemon zest, dash
  • 1 lemon, whole (juice from)
  • 1/2 cup yellow onion, minced
  • 2 cups vegetable broth
  • 1 cup basmati rice
  • Black pepper, freshly ground (dash)
  • Salt, dash
  • 2 tablespoons olive oil
  • Cumin, ground (dash)
  • 1/3 cup feta cheese, crumbled

How to Make

  • Step 1: Heat oil in covered pot, add onion then brown. add garlic and rice: stir, then add stock and spices. Cover cook 15 minutes.

  • Step 2: Add spinach and dill; cook 5 more minutes or until rice is cooked.

  • Step 3: Stir in cheese and lemon juice and zest.
