- When choosing the feta cheese, make sure to get a block that is firm and Greek.
- Instead of feta cheese, use halloumi cheese. Halloumi is a semi-hard cheese that is traditionally made from sheep or goat milk. It has a higher melting point than feta, so it will hold its shape better when fried. This will give the salad a more robust texture and a richer flavor.
- Instead of red wine vinegar, use balsamic vinegar. Balsamic vinegar has a sweet and tangy flavor that will add a nice depth of flavor to the salad. It will also add an extra layer of complexity to the onion dressing.
