"The marinade takes just a few minutes to prepare, and creates an absolute explosion of incredible flavor! I only marinated my chicken in this magical mix for 30 minutes, but the flavor was still loud and clear. You can grill the chicken outdoors over a gas or charcoal flame, or if you don’t have a grill, you can bake it in the oven. Either way, you’ll get super flavorful and moist pieces of chicken that the whole family will love! PLEASE NOTE: This recipe is extra garlicky, so if you're not into heavy garlic flavor, use 2 cloves instead of 4."

Step by Step Method

FOR THE MARINADE


Step 1

Combine yogurt, olive oil, minced garlic, oregano, salt, and freshly cracked pepper in a bowl.

Step 2

Use a fine holed cheese grater or a zester to scrape the thin layer of yellow zest from the lemon skin into the bowl.

Step 3

Add the juice from half of the lemon, about 1-2 tablespoons.

Step 4

Stir until everything is well mixed.

Step 5

Roughly chop a big handful, or about 1/4 bunch of parsley, and add it into the marinade. Stir.

Step 6

Add chicken pieces and marinade the chicken in a gallon sized Zip-Lock baggie. Remove as much air as possible when closing the bag, and massage the bag to mix the contents, and make sure the chicken is well coated.

Step 7

Refrigerate for 30 minutes.

Step 8

After marinating for 30 minutes, either cook the chicken on a grill OR preheat the oven to 375 degrees F, to bake the chicken in the oven.

TO BAKE THE CHICKEN


Step 9

Place chicken pieces in a large 9x13 inch casserole dish. Bake for 45-60 minutes, or until chicken is golden brown on top.

I used legs/thighs for this awesome chicken! I did add more garlic, marinated for 1 hour and baked in the oven. The result was very flavourful and juicy! I made enough for dinner tonight! DH & I LOVE this chicken. Thanks Linda for another great recipe! Made for Billboard Recipe Tag.

Very good chicken which we cooked on the grill - used bone-in breasts and thighs. I used fresh oregano instead of the dried but otherwise made as directed. Thanks for sharing!
