Ingredients

The ingredients are:
  • 1 cup yogurt (plain)
  • 2 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1/2 tablespoon dried oregano
  • 1 medium lemon
  • 1/2 teaspoon salt
  • Freshly cracked pepper, sprinkling
  • 1/4 bunch fresh parsley
  • 3 1/2 to 4 pounds mixed chicken pieces

How to Make

  • FOR THE MARINADE

  • Step 1: Combine yogurt, olive oil, minced garlic, oregano, salt, and freshly cracked pepper in a bowl.

  • Step 2: Use a fine holed cheese grater or a zester to scrape the thin layer of yellow zest from the lemon skin into the bowl.

  • Step 3: Add the juice from half of the lemon, about 1-2 tablespoons.

  • Step 4: Stir until everything is well mixed.

  • Step 5: Roughly chop a big handful, or about 1/4 bunch of parsley, and add it into the marinade. Stir.

  • Step 6: Add chicken pieces and marinade the chicken in a gallon sized Zip-Lock baggie. Remove as much air as possible when closing the bag, and massage the bag to mix the contents, and make sure the chicken is well coated.

  • Step 7: Refrigerate for 30 minutes.

  • Step 8: After marinating for 30 minutes, either cook the chicken on a grill OR preheat the oven to 375 degrees F, to bake the chicken in the oven.

  • TO BAKE THE CHICKEN

  • Step 9: Place chicken pieces in a large 9x13 inch casserole dish. Bake for 45-60 minutes, or until chicken is golden brown on top.
