Step 1: Combine yogurt, olive oil, minced garlic, oregano, salt, and freshly cracked pepper in a bowl.
Step 2: Use a fine holed cheese grater or a zester to scrape the thin layer of yellow zest from the lemon skin into the bowl.
Step 3: Add the juice from half of the lemon, about 1-2 tablespoons.
Step 4: Stir until everything is well mixed.
Step 5: Roughly chop a big handful, or about 1/4 bunch of parsley, and add it into the marinade. Stir.
Step 6: Add chicken pieces and marinade the chicken in a gallon sized Zip-Lock baggie. Remove as much air as possible when closing the bag, and massage the bag to mix the contents, and make sure the chicken is well coated.
Step 7: Refrigerate for 30 minutes.
Step 8: After marinating for 30 minutes, either cook the chicken on a grill OR preheat the oven to 375 degrees F, to bake the chicken in the oven.
Step 9: Place chicken pieces in a large 9x13 inch casserole dish. Bake for 45-60 minutes, or until chicken is golden brown on top.
