Greek Lemon Pilaf

Step 1

In a heavy saucepan, saute onion in butter until tender.

Step 2

Add rice and orzo and cook, stirring, for 2 minutes.

Step 3

Add chicken broth and lemon juice and bring to a boil.

Step 4

Reduce heat, cover, and simmer for 20 minutes or until rice is tender and liquid has been absorbed.

Step 5

Fluff pilaf up with fork and stir in chopped parsley.

I made this once and then 3 more times in the past few months as sides to seafood and chicken. We love it with just about anything! Love the fresh taste of lemon with the rice. Such a great dish!

Derf "RIP" Forever in our Kitchen

We loved this pilaf, lovely lemony flavour! I used brown rice so mine took 45 minutes to cook perfectly. I also used a red onion which coloured it somewhat but was delicious. i will be making this again.
