Step by Step Method

Step 1

In a large bowl whisk together the oil and lemon juice; season with salt and pepper. Add the next 5 ingredients (-onion); toss.

Step 2

Using tongs, turn pitas over gas flame or in broiler to char slightly (15 seconds per side).

Step 3

Pull each pita open, spread with tapenade and fill with salad.

Love food like this and this version is Yummers! Used “Greek” style pita picked up from the market - they apparently don’t split in the middle and a bit more doughy than the regular pitas. Made some home-made tapendade and all the ingredients just shone though deliciously. I want to make this again with some home-made pitas. Thank you, ellie, for sharing.

Marramamba

I left out the garbanzo beans because I don’t like them but otherwise made as directed. This was so good and so quick, great for a light lunch or supper
