  • 2 cups torn lettuce
  • 1 cup garbanzo beans (chickpeas, drained)
  • 1 cup feta diced cheese
  • 1 tomato (cored and cut into thin wedges)
  • 1 red onion (sliced thinly)
  • 120 grams pita bread (2 pita breads, 7-inch, cut in half to make 4 sandwiches)
  • Tapendade (olive paste)

How to Make

  • Step 1: In a large bowl whisk together the oil and lemon juice; season with salt and pepper. Add the next 5 ingredients (-onion); toss.

  • Step 2: Using tongs, turn pitas over gas flame or in broiler to char slightly (15 seconds per side).

  • Step 3: Pull each pita open, spread with tapenade and fill with salad.
