Step by Step Method

Step 1

Preheat your oven to 350F.

Step 2

Grease a medium baking dish.

Step 3

In a saucepan melt butter. Add flour whisk for 1 minute. Add in milk, bouillon and garlic powder. Cook sauce on low until smooth and boiling, stirring occasionally with a whisk. Reduce heat to low. Stir in 1 cup grated cheddar cheese and 1/4 cup Parmesan cheese. Season with some salt and pepper.

Step 4

Place half the sliced potatoes into baking dish. Pour half the cheese sauce over potatoes, then half of sliced green onions.

Step 5

Repeat with second layer with potatoes, remaining cheese sauce then remaining green onions.

Step 6

Sprinkle top with remaining 1/4 cup Parmesan cheese then 1 cup grated cheddar cheese.

Step 7

Bake uncovered for about one hour or until the potato slices are fork-tender.

I scaled this back for 2 individual serves and have to say they were very generous and very delicious. I made some minor changes because of dietary needs and requests = I used Carisma potatoes (a low GI white potato), the green part of the spring only, omitted the parmesan and used extra sharp cheddar and at the DH's request I added some shredded baby spinach when I added the spring onion and baked for 1 hour at 170C fanforse for a delicious side which we both enjoyed.
