Step by Step Method

Step 1

Preheat oven to 375 degrees F.

Step 2

Using a sharp knife, cut a slit into the thick side of each chicken breast about 2 inches long and 1 1/2 inches deep.

Step 3

Mash together the Gorgonzola cheese, parsley, chives in a small bowl; season with black pepper. Divide the filling in half, and stuff each chicken breast with cheese filling.

Step 4

Sprinkle the chicken with the season salt.Heat 1 Tbs olive oil in a saute pan over medium low and slowly brown chicken on all sides.

Step 5

Wrap 2 slices of bacon around each breast, and secure with wooden toothpicks.

Step 6

Place the chicken breasts into the prepared baking dish.

Step 7

Bake in the preheated oven until the bacon is browned and the chicken is no longer pink inside, about 20 minutes.

Very good indeed! Loved that the cheese melted so easily and the chicken was cooked just right. It was served with twice baked potatoes and broccoli spears. A winner dinner!

I added baby spinach in with the cheese and followed your recipe. I did use a little more cheese than called for. The bacon got crispy on the outside and the chicken was still moist and delicious on the inside. It was very good!
