"This recipe was originally in Bon Appetit 1999 - It is wonderful. The ginger and orange juice gives a rich flavour and color to the carrots - I think this will become any families favorite.. Fresh squeezed orange juice is best but "not from concentrate" will do."

Step by Step Method

Step 1

Place all the ingredients except parsley in a large skillet over medium high heat.

Step 2

Bring to a boil, cover and let it simmer for 3 minutes

Step 3

Uncover and let simmer until the liquid has evaporated and the carrots are glazed - about 9 minutes
