So good!!! We had a whole lot of kale in the garden and this was such a good use for it! The vinaigrette was fabulous - I especially loved it on the crunchy veggies. Next time, I'll double the vinaigrette, because DH didn't think there was enough. The market didn't have golden beets, so I bought regular red beets - still good, though next time I might roast them before adding to the salad. Oh - and I forgot the asiago cheese until AFTER I had taken the photo - sorry about that! Thanks for sharing this lovely salad - it will be on our regular rotation until the kale plant stops bearing!
