Step by Step Method
Step 1
In a skillet cook bacon until crisp; remove bacon from pan reserving 2 teaspoons of the drippings. Set both aside.
Step 2
In a dish (like a pie pan) combine the next 3 ingredients (cornmeal - pepper). Dredge tomato slices in the mixture. In the same skillet sprayed with cooking spray over medium-high heat, heat 1 teaspoon of the drippings and 1 teaspoon oil, cook 6 tomato slices for 2 minutes each side or until browned. Repeat with remaining bacon drippings and oil and the remaining 6 tomato slices.
Step 3
On each of 4 bread slices spread 1 tablespoon mayonnaise, top with 2 lettuce leaves, 3 tomato slices and 2 bacon slices. Top with remaining bread slices and serve immediately.
