Ingredients

The ingredients are:
  • 8 slices bacon, lower fat version
  • 1/3 cup yellow cornmeal
  • 1/4 cup Parmesan cheese, shredded
  • 1/4 teaspoon pepper
  • 2 green tomatoes, sliced into 1/4 inch thick slices -- you need 12 sliced
  • 2 teaspoons olive oil, divided
  • 1/4 cup mayonnaise, reduced fat
  • 8 (1 ounce) slices white bread, toasted
  • 8 lettuce leaves

How to Make

  • Step 1: In a skillet cook bacon until crisp; remove bacon from pan reserving 2 teaspoons of the drippings. Set both aside.

  • Step 2: In a dish (like a pie pan) combine the next 3 ingredients (cornmeal - pepper). Dredge tomato slices in the mixture. In the same skillet sprayed with cooking spray over medium-high heat, heat 1 teaspoon of the drippings and 1 teaspoon oil, cook 6 tomato slices for 2 minutes each side or until browned. Repeat with remaining bacon drippings and oil and the remaining 6 tomato slices.

  • Step 3: On each of 4 bread slices spread 1 tablespoon mayonnaise, top with 2 lettuce leaves, 3 tomato slices and 2 bacon slices. Top with remaining bread slices and serve immediately.
