"This is the traditional Dutch recipe for this fried egg and ham sandwich. Legend goes that this dish used to be served to cafe patrons late at night, just before they were kicked out at closing time, which may explain why the Dutch name for this dish, "uitsmijter," which means "bouncer" or ''doorman'' in English. It is now a popular breakfast, brunch and lunch dish in the Netherlands."

Step by Step Method

Step 1

Melt the butter in a frying pan or skillet and fry the eggs.

Step 2

Once the bottoms of the eggs are set, take the pan off the heat, place a lid on the pan and allow the eggs to steam until the top has firmed up. If you prefer your eggs more thoroughly cooked, flip them over and fry until the yolk is done to your liking.

Step 3

Lightly toast the bread (optional).

Step 4

Place the slices of bread or toast on a plate.

Step 5

Top with the fried eggs, ham and cheese.

Step 6

Season to taste with salt and pepper.

Variations:

Use sharp cheddar cheese instead of Gouda.

Step 9

Add sliced avocado and substitute Monterey Jack cheese for the Gouda.

Step 10

Top the eggs and ham with cheese and put under the broiler to melt the cheese for a few minutes before completing the sandwich.

Step 11

Substitute crispy bacon for the ham.

Step 12

Use smoked rather than boiled ham.

Step 13

Serve on whole-wheat or whole-grain bread or toast.

Step 14

Spread butter or mayonnaise on the toast.

Nice breakfast treat. I did not have gouda so I used some gruyere. Served along with sliced avocado. Nice and healthy - used 12 grain bread.

I used wholemeal/wholegrain bread and a sharp cheddar cheese otherwise made as per recipe and thoroughly enjoyed this great and filling breakfast, thank you lazyme made for 5 Star Recipe tag game at FF&F.

My husband really enjoyed this hearty weekend breakfast. The melted Gouda cheese was a nice. I did not place the sandwich under the broiler, but put the egg on top to help melt the cheese. Made for CQ19.

We loved this for breakfast, although it would make for a great lunch, too. We normally cook our eggs with this method, but adding the ham and gouda really kicked it up a notch. We chose to finish it under the broiler so that the cheese would be melted (on of your listed options). Yum!

Breakfast was quick, easy and good! We used a rustic white bakery bread, only one egg per sandwich, warmed the ham before assembling and the gouda cheese. I think these sandwiches would be yummy on bagels or flatbreads too. Wont be the last time we enjoy these breakfast sandwiches! Made and reviewed for Susie's World Tour 2019 - Benelux.
