"This tasty fried chicken recipe is one I tried at work when one of my co-workers brought in some leftovers for her lunch. She shared a piece with me and I loved it, I had to have the recipe and she gladly shared it with me. I use my #recipe2067 but you can use your favourite ranch dressing mix."

Step by Step Method
Step 1
Combine pancake mix and 1 1/2 tablespoons ranch dressing; mix well, and set aside.
Step 2
Combine club soda, egg, and remaining ranch salad dressing mix; stir well.
Step 3
Dip chicken in club soda mixture; dredge in pancake mixture.
Step 4
Allow chicken to drain for a minute on a wire rack placed on top of a baking sheet.
Step 5
Heat 2 inches of oil in a large skillet to 400 degrees Fahrenheit; add chicken and fry 3 to 5 minutes or until golden brown.
Step 6
Place chicken on a lightly greased rimmed baking sheet; bake uncovered in a preheated 350 degree Fahrenheit oven for 30 minutes.
