Step 1: Combine pancake mix and 1 1/2 tablespoons ranch dressing; mix well, and set aside.
Step 2: Combine club soda, egg, and remaining ranch salad dressing mix; stir well.
Step 3: Dip chicken in club soda mixture; dredge in pancake mixture.
Step 4: Allow chicken to drain for a minute on a wire rack placed on top of a baking sheet.
Step 5: Heat 2 inches of oil in a large skillet to 400 degrees Fahrenheit; add chicken and fry 3 to 5 minutes or until golden brown.
Step 6: Place chicken on a lightly greased rimmed baking sheet; bake uncovered in a preheated 350 degree Fahrenheit oven for 30 minutes.
