Step by Step Method

Step 1

Cook onions in butter, just until tender.

Step 2

Blend in flour, salt, and pepper.

Step 3

Add bouillon and sherry.

Step 4

Cook and stir until thickened and bubbly.

Step 5

Turn into 1 quart casserole.

Step 6

Toss croutons with 2 tablespoons melted butter and spoon on the onion mixture, evenly.

Step 7

Sprinkle with Swiss cheese and Parmesan if desired.

Step 8

Put in oven under broiler and broil for about 1 minute until the cheese melts.

Step 9

Serve immediately.

This is such a great casserole. It's every bit as good as a steaming bowl of French Onion Soup. I used both Swiss and Parmesan on top, and it melted so nicely and helped to soften the croutons a bit. Thanks for a great recipe, lazyme!
