Fluffy Rice & Chicken

Step 1

Preheat oven to 350°F.

Step 2

Mix mushroom soup and milk; reserve 1/2 cup of mixture.

Step 3

Mix remaining soup mixture, the rice, mushrooms (with liquid) and half the onion soup mix.

Step 4

Pour into ungreased baking dish, 11X7 inches.

Step 5

Place chicken breasts on top.

Step 6

Pour reserved soup mixture over chicken breasts; sprinkle with remaining onion soup mix.

Step 7

Cover with aluminum foil; bake 1 hour.

Step 8

Uncover; bake 15 minutes longer.

Super yummy! This reminds me of a 'no peek chicken' recipe that I have. I like that this version uses boneless/skinless chicken breasts. Great flavor from the onion soup mix! Love the rice, too. Thank you!

Very tasty recipe and so easy to put together. I followed the instructions as listed except for uncovering it for another 15 minutes because I made this in a toaster oven and didn't want to make a mess. We really enjoyed this, thx for sharing your recipe here.

We really liked this dish - great comfort food dish and just right for the three of us. My chicken breasts were probably fa bit bigger than what was called for but otherwise followed the recipe exactly. Thanks for sharing!
