Fat-Free Oatmeal Cookie Pie Crust
June 08, 2013
"I never expected to find a low-fat low-sugar pie crust to substitute for a graham cracker crust (which is always full of butter and sugar), but this one works perfectly. I found it on fatfreevegan.com. Its easy to put together with common ingredients, and with some patience and a bit of muscle for spreading it in a pie plate, it makes a great pie crust. I won't be looking any further!"

Preheat oven to 375.
Put oats into a small blender and pulverize.
Add the other dry ingredients and pulse a few times to mix, then transfer to a medium bowl.
Add applesauce and vanilla to the dry ingredients and mix well with a rubber spatula or by hand.
Spray a 9" pie plate lightly with cooking spray, then spread crust mixture using your hands into the pie plate starting from the middle and working your way up the sides.
It may seem too dry, but be patient and keep spreading and it will be just right.
Bake in preheated oven for 8-10 minutes until crisp.
Cool before adding pie filling.
