Step by Step Method

Step 1

Preheat oven to 350 degrees. Grease 12 regular-size muffin tins or line with paper liners.

Step 2

In a bowl combine the mashed bananas with egg, milk, both sugars and applesauce.

Step 3

In another bowl combine the flour with baking soda, and salt. Add flour mixture to banana mixture then using a spoon gently mix until just combined.

Step 4

Mix in the nute or chocolate chips (if using).

Step 5

Spoon/divide the batter evenly between the muffin tins. Bake 22-25 minutes or until muffins test done.

I made these using cup for cup gluten free all-purpose mix and these turned out perfectly delicious. Great banana muffins, you will never know they are low-fat.

Don't let "Low Fat" keep you from trying these tasty treats...no one will ever know! They are moist and intensity of the banana flavor shines through. The only change I made was to substitute the sugars with just 1/2 cup Splenda brown sugar. Thank you for posting Kitten! I'll be adding these to my healthy muffin freezer stash.
