  • 3 bananas (medium size, very ripe)
  • 1 large egg
  • 1/3 cup buttermilk (low-fat, or can use fat-free milk)
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1/4 cup applesauce (sweetened or unsweetened)
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 4 ounces semi-sweet chocolate chips (1/2 cup, or chopped nuts, optional)

How to Make

  • Step 1: Preheat oven to 350 degrees. Grease 12 regular-size muffin tins or line with paper liners.

  • Step 2: In a bowl combine the mashed bananas with egg, milk, both sugars and applesauce.

  • Step 3: In another bowl combine the flour with baking soda, and salt. Add flour mixture to banana mixture then using a spoon gently mix until just combined.

  • Step 4: Mix in the nute or chocolate chips (if using).

  • Step 5: Spoon/divide the batter evenly between the muffin tins. Bake 22-25 minutes or until muffins test done.
