Step 1

In a bowl, scoop out and roughly mash avocado flesh with a fork and spread onto hot toast and then top with lettuce and tomato and set aside.

Step 2

Cook pancetta in a lightly greased frying pan and then transfer t a plate and keep warm.

Step 3

Heat oil in same pan over medium heat and fry eggs to your liking.

Step 4

Add the crispy pancetta to toast stacks and top with egg and season and serve immediately.
