Ingredients

The ingredients are:
  • 1 avocado, ripe
  • 4 slices (120 grams) sourdough bread ( toasted, or 8 slices if making sandwiches)
  • 4 lettuce leaves (oakleaf lettuce or butter lettuce leaves)
  • 2 tomatoes, sliced
  • 80 grams pancetta ham (8 slices)
  • 1 tablespoon olive oil
  • 4 large eggs

How to Make

  • Step 1: In a bowl, scoop out and roughly mash avocado flesh with a fork and spread onto hot toast and then top with lettuce and tomato and set aside.

  • Step 2: Cook pancetta in a lightly greased frying pan and then transfer t a plate and keep warm.

  • Step 3: Heat oil in same pan over medium heat and fry eggs to your liking.

  • Step 4: Add the crispy pancetta to toast stacks and top with egg and season and serve immediately.
