Step by Step Method

Step 1

Preheat oven to 375°F.

Step 2

Place muffin halves on a cookie sheet cut side up and then spread each muffin half with half of the sauce and top with half of the remaining ingredients in order given.

Step 3

Bake for about 10 minutes or until cheese is melted and serve as an appetizer or snack.

Quick and tasty little pizzas...I used pineapple tidbits instead of the mushrooms...the hubby got three pizzas while I got two...I sprinkled red pepper flakes on mine...I toasted the top of the muffins before adding the sauce to prevent it from being soggy...yum...made for "WOTM" tag game...

DH made this recipe using ezekiel english muffins for our wee one and it was gobbled up in no time. Great recipe idea for a toddler!!

Used tomato paste in this, as it is what I had on hand (also did not have the mushrooms). I did use the pepperoni, and a bit less oregano. This was quick, easy and very yummy.
