"This is so easy to prepare, and even though is has 5 eggs, it serves 6-8 people, so it really isn't all that bad. The best part with this dish is you can really get creative. Red peppers, mushrooms, ham, bacon; or change up the cheese to create a new favorite. There are endless combinations to make. Besides being perfect for lunch, a nice light dinner, it is also great for brunch and personally I love it for breakfast. Since there is no crust - with this dish, adding some roasted potatoes on the side is perfect."

Step by Step Method

Step 1

Base ... In a large saute pan, add the oil and bring to medium-medium high heat. Add the onion and garlic and cook 2-3 minutes until tender. then, add in the spinach (drained and squeezed dry) along with the red peppers, Italian seasoning, salt, and pepper and cook (breaking up the spinach as it cooks) until the everything is cooked through and there is no liquid in the pan. Remove from the heat and let it cool slightly. Before adding it to the cheese mixture, check for any additional seasoning.

Step 2

Eggs and Cheese ... Add the eggs to a small bowl and beat well, add 1/4 cup of parmesan along with the swiss cheese and mix to combine. Add the cheese mix to the spinach and mix lightly to combine.

Step 3

Bake ... Preheat the oven to 350 degrees. Add the filling to a 9" pie plate sprayed with a non-stick spray. Level off the top and finish with the 2 tablespoons of parmesan cheese. Bake on the middle shelf for 35-45 minutes until golden brown; and when you insert a knife or a toothpick in the center, it comes out clean. Set to the side and make sure to cover and let it rest at least 10 minutes before slicing.

Step 4

Serve ... This is great warm, but it is equally as good room temperature. And, as I mentioned, breakfast, brunch, lunch or dinner. And don't forget to change it up by adding your favorite fillings. ENJOY!

Wonderful quiche! Did use a mixture of cheeses as I did not have enough of the swiss. Baked it in my counter top oven (which in this heat lives on the deck) for 30 minutes. We had it slightly warm with a cucumber/tomato salad. Will certainly be made again!

Loved it! The only change made was I substituted fresh steamed spinach, chopped red pepper and and added Canadian bacon. Had for dinner last night and for my brunch this morning! A definite keeper. Thanks Kim!
