Ingredients

The ingredients are:
  • 1 (10 ounce) package frozen chopped spinach, thawed and drained well
  • 1 medium onion, diced fine
  • 1 garlic clove, minced
  • 1/4 cup roasted red peppers, diced
  • 3/4 pound swiss cheese, grated
  • 1/4 cup parmesan cheese, grated
  • 2 tablespoons parmesan cheese, grated (as a topping)
  • 5 extra large eggs
  • 1/2 teaspoon Italian seasoning
  • Salt and pepper
  • 2 teaspoons olive oil

How to Make

  • Step 1: Base ... In a large saute pan, add the oil and bring to medium-medium high heat. Add the onion and garlic and cook 2-3 minutes until tender. then, add in the spinach (drained and squeezed dry) along with the red peppers, Italian seasoning, salt, and pepper and cook (breaking up the spinach as it cooks) until the everything is cooked through and there is no liquid in the pan. Remove from the heat and let it cool slightly. Before adding it to the cheese mixture, check for any additional seasoning.

  • Step 2: Eggs and Cheese ... Add the eggs to a small bowl and beat well, add 1/4 cup of parmesan along with the swiss cheese and mix to combine. Add the cheese mix to the spinach and mix lightly to combine.

  • Step 3: Bake ... Preheat the oven to 350 degrees. Add the filling to a 9" pie plate sprayed with a non-stick spray. Level off the top and finish with the 2 tablespoons of parmesan cheese. Bake on the middle shelf for 35-45 minutes until golden brown; and when you insert a knife or a toothpick in the center, it comes out clean. Set to the side and make sure to cover and let it rest at least 10 minutes before slicing.

  • Step 4: Serve ... This is great warm, but it is equally as good room temperature. And, as I mentioned, breakfast, brunch, lunch or dinner. And don't forget to change it up by adding your favorite fillings. ENJOY!
