Step by Step Method

Step 1

Thaw pastry for 20 minutes.

Step 2

Preheat oven to 350 degrees F.

Step 3

On a lightly floured board, roll pastry to a 12 x 15 inch rectangle. Place dough on ungreased baking sheet; range apples down the center, sprinkle with cinnamon-sugar mixture (cinnamon mixed with sugar) and add raisins if desired. Brush edges of dough with egg and sugar cinnamon mixture. Roll up jellyroll style with seam side down; turn ends under and brush with egg.

Step 4

Make diagonal slits across the top at 2 inch intervals.

Step 5

Bake for 35-40 minutes.

I made as directed but because our pastry sheets are about 23cm square the two apples sliced equated to two strudels and baked to perfection at 175C fan forced in 35 minutes. The only change I made was to use 2 teaspoons of sugar but left the cinnamon the same but next time I will scatter a 1/2 teaspoon of sugar over the strudel after putting the butter on and would suggest best served as soon as possible after making it. I thoroughly enjoyed the slice I had after lunch today (about a 1/4 of one strudel) with some cream and the DH scarfed 3/4 of one with cream and ice cream after dinner last night so I think that gives testament to how it tasted.
