Step 1: Thaw pastry for 20 minutes.
Step 2: Preheat oven to 350 degrees F.
Step 3: On a lightly floured board, roll pastry to a 12 x 15 inch rectangle. Place dough on ungreased baking sheet; range apples down the center, sprinkle with cinnamon-sugar mixture (cinnamon mixed with sugar) and add raisins if desired. Brush edges of dough with egg and sugar cinnamon mixture. Roll up jellyroll style with seam side down; turn ends under and brush with egg.
Step 4: Make diagonal slits across the top at 2 inch intervals.
Step 5: Bake for 35-40 minutes.
