Step by Step Method
Step 1
Shave carrots into ribbons using a vegetable peeler.
Step 2
Soak carrots and dates in ice water until the ribbons firm up and curl, about 15 minutes.

Drain and pat dry.
Step 4
Whisk together the parsley, olive oil, honey, salt and the lime juice and 1/4 teaspoon lime zest in a medium bowl.

Add the carrots along with the feta cheese, dates and almonds.
