The ingredients are:
  • 3 carrots, shaved
  • 2 tablespoons fresh parsley , minced
  • 2 tablespoons olive oil
  • 2 teaspoons honey
  • 1/4 teaspoon salt
  • 1 lime, juiced and zested
  • 2 ounces feta cheese (1/4 cup) crumbled
  • 2 tablespoons flaked almonds, toasted
  • 2 tablespoons dates, seeded and finely chopped

How to Make

  • Step 1: Shave carrots into ribbons using a vegetable peeler.

  • Step 2: Soak carrots and dates in ice water until the ribbons firm up and curl, about 15 minutes.

  • Step 3: Drain and pat dry.

  • Step 4: Whisk together the parsley, olive oil, honey, salt and the lime juice and 1/4 teaspoon lime zest in a medium bowl.

  • Step 5: Add the carrots along with the feta cheese, dates and almonds.

  • Step 6: Toss until evenly combined.

  • Step 7: Let the salad marinate 2 hours chilled before serving.

  • Step 8: Check seasoning.
