Step by Step Method

Step 1

Preheat oven to 400°F. Line a baking sheet with foil and spray with cooking spray (makes cleanup much easier).

Step 2

Combine eggs, hot sauce, and salt in a shallow dish.

Step 3

Combine cheese and crumbs in a second dish.

Step 4

Dip chicken pieces in egg mixture and then in crumbs to coat. Pan crumb mixture to coat if needed.

Step 5

Place chicken on baking sheet, flattening to even thickness as much as possible. Bake about 45 minutes, until done. (strips or nuggets will be done sooner).

I cut the recipe down for just the two of us. It was super tender on the inside and a nice coating on the outside. We had sweet potato fries to go with it. Yummy!

I made these into chicken fingers...they didn't crisp up like I was hoping but that may be due to cooking them a shorter period of time...we did enjoy the flavor...made for "Alphabet" tag game...
