Step by Step Method

Step 1

Grease a 9 x 13-inch loaf pan.

Step 2

Preheat oven to 325 degrees F (if using a metal pan) or 300 F (if using a glass or ceramic pan).

Step 3

Stir or beat together wet ingredients (oil, eggs, milk, rum if using, extracts and mashed bananas) along with brown sugar.

Step 4

Add flour, baking powder and baking soda and beat together with electric mixer for 2 minutes, scaping bowl with spatula to make sure all ingredients are mixed in.

Step 5

Lightly stir in the walnuts.

Step 6

Pour into greased pan and bake 80 minutes. If toothpick inserted into bread comes out clean, remove from oven (otherwise cook a little longer).

Step 7

Let cool in pan for 10 minutes, then turn it out to a cooling rack and let cool completely.

I made this as instructed, and the batter was pretty runny, so I didn't think this would cook out properly. But, this turned out fantastic! I loved the bit of rum in this as it added a lovely flavor.
