Ingredients

The ingredients are:
  • 1/2 cup vegetable oil
  • 2 eggs, whisked
  • 1/4 cup milk
  • 1/4 cup rum, either dark or spiced (optional, may be omitted)
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 3-4 ripe bananas, mashed
  • 1/2 cup dark brown sugar
  • 1 3/4 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 cup chopped walnuts tossed with a little flour

How to Make

  • Step 1: Grease a 9 x 13-inch loaf pan.

  • Step 2: Preheat oven to 325 degrees F (if using a metal pan) or 300 F (if using a glass or ceramic pan).

  • Step 3: Stir or beat together wet ingredients (oil, eggs, milk, rum if using, extracts and mashed bananas) along with brown sugar.

  • Step 4: Add flour, baking powder and baking soda and beat together with electric mixer for 2 minutes, scaping bowl with spatula to make sure all ingredients are mixed in.

  • Step 5: Lightly stir in the walnuts.

  • Step 6: Pour into greased pan and bake 80 minutes. If toothpick inserted into bread comes out clean, remove from oven (otherwise cook a little longer).

  • Step 7: Let cool in pan for 10 minutes, then turn it out to a cooling rack and let cool completely.
