Step 1: Grease a 9 x 13-inch loaf pan.
Step 2: Preheat oven to 325 degrees F (if using a metal pan) or 300 F (if using a glass or ceramic pan).
Step 3: Stir or beat together wet ingredients (oil, eggs, milk, rum if using, extracts and mashed bananas) along with brown sugar.
Step 4: Add flour, baking powder and baking soda and beat together with electric mixer for 2 minutes, scaping bowl with spatula to make sure all ingredients are mixed in.
Step 5: Lightly stir in the walnuts.
Step 6: Pour into greased pan and bake 80 minutes. If toothpick inserted into bread comes out clean, remove from oven (otherwise cook a little longer).
Step 7: Let cool in pan for 10 minutes, then turn it out to a cooling rack and let cool completely.
