Step by Step Method

Step 1

Cook chicken in water 40 minutes. debone reserve stock.

Step 2

In another pan saute veggies in oil, starting with onion and ending with garlic.

Step 3

Add tomato paste, fry until golden but not burning. Add spices, brown a little more.

Step 4

Add stock and chicken; bring to a boil cover and simmer 20 minutes until potatoes are tender.

Step 5

Make a ring with rice fill center with stew.

I made this for the Emirati leg of the Amazing Race and it was delicious. Too soupy for a platter, I served it with rice in a bowl. I used 3# chix quarters with the skin removed. Added bone in to the stew, and removed the meat from the bones about 40 min in. I only used 1 zuke. I did not have pumpkin as it is out of season. I might have used butternut squash but my pan was full anyway so whatever. I used new baby potatoes instead of chopping whole since they came in my produce box. Stew made enough for 8-10 which is a lot for us, but it only gets better as it reheats, so joy all around. Very comforting homestyle food. Not as spicy as you might expect. It looks like a ton of spice but it disappears.
