Step by Step Method

Step 1

In a large bowl combine the chicken with green onion, cashews, apple and cucumber. In a small bowl combine the mayonnaise, mustard, garlic powder and sugar; add to chicken mixture and toss to coat, season with salt and pepper.

Step 2

Place a lettuce leaf on each roll bottom the divide the chicken mixture on top of the lettuce then replace the tops.

Great flavours and textures. I used a wholemeal wholegrain roll and left skin on the cucumber and apple and used a grainy Dijon mustard and as I did not have garlic powder I used a no salt garlic herb seasoning. I scaled back for 1 serve and only used half that on my roll so left overs will go on my plate tonight with our crumbed chicken. Thank you Kittencal made for Alphabet Tag Game at FF&F.
