Step 1

Preheat oven to 375 F. Lightly grease a 9 inch pie plate.

Step 2

Arrange the Canadian bacon slices on the bottom and up the sides of the prepared pie plate, slightly overlapping the slices. If necessary, cut pieces to fit any large openings.

Step 3

Cut away the rind from the brie (just the side rinds) and cut into cubes.

Step 4

In a bowl, whisk together the eggs, mayonnaise, pepper, parmesan cheese, and basil. Stir in the cubed Brie. Pour into the pie plate. Make sure the Brie is evenly distributed throughout.

Step 5

Bake for 30 minutes, or until a knife inserted in the middle comes out clean. If the bacon starts to brown too much on the edges, cover with aluminum foil. Let rest for 5 minutes before serving.

This was great! I loved the Canadian bacon crust. The quiche was creamy and delicious. This is definitely a make again quiche. We enjoyed it for a breakfast for dinner meal, and had the leftovers for breakfast the next day!
