Step by Step Method

Step 1

Mix spice mix

Step 2

Pam spray slow cooker

Step 3

Remove giblets if there is

Sprinkle chicken with spice mixture lightly.to taste

Place lemon into cavity of chicken.

Tie legs together with kitchen string, and tuck wingtips under.

Place celery, onion, and garlic in a single layer in a lightly greased 6-quart slow cooker.

Step 8

Place chicken on top of onion mixture, breast side up.

Step 9

Arrange and tuck remaining vegetables around chicken.

Step 10

Sprinkle vegetables with spice mixture to taste.

Cover and cook on low 8 hours or until done. Remove chicken to a serving dish.

Step 12

Rub skins from beets and cut into quarters

Step 13

Arrange with other vegetables around chicken. Whisk mustard into remaining cooking juices in slow cooker

Step 14

Season with salt and pepper to taste.

Step 15

Serve sauce with chicken.
