Step 1

To make chillie ginger glaze, place all ingredients in a small saucepan on high heat and heat until boiling and cook for 3 to 4 minutes until slightly thickened, set aside.

Step 2

Cut salmon fillets into 2cm cubes and add to rice flour and toss to coat.

Step 3

Heat oil in a frying pan on high and cook salmon cubes in batches for 1-2 minutes each side, until crisp and golden and drain on paper towel.

Step 4

Place salmon cubes on 20 chinese soup spoons and add 1 Thai basil leaf and drizzle over glaze and serve with any remaining glaze alongside.

If you don't have any chinese spoons, you can use small shallow dishes with toothpicks for picking up the salmon.

Wow, Wow, Wow - This is So Good! The flavor of the salmon, sauce, basil together is yum! At first bite, my daughter closed her eyes in food pleasure. I did salt and pepper the salmon before coating with the rice flour, used pepper flakes (used a little less - though I like it hot, my daughter is less inclined), extra ginger, and used regular basil in place of Thai (that's what I had on hand). I served it family style for dinner instead of appetizer style. DO NOT skip the basil, we had it on top of each piece...I can't say enough good things about this dish - right into my Best Of it goes.
