Step by Step Method
Step 1
Preheat oven to 400 degrees F.
Step 2
Line a baking sheet with parchment paper, then add a wire rack so your chicken will crisp up all over. I spray my rack with a cooking oil to prevent sticking.
Step 3
Put the cornflakes into a sealable bag and crush into small bits.
Step 4
Add the ranch seasoning and parmesan cheese to the bag and mix thoroughly.
Step 5
Melt the butter in a small pan, or in the microwave.
Step 6
Pound the chicken breasts so they are about 1/4" thick.
Step 7
Dip each chicken breast into the melted butter, coating both sides.
Step 8
Add each chicken breast to the cornflake mixture in the bag and shake to completely coat both sides.
Step 9
Put the chicken onto the wire rack.
Step 10
Repeat for each chicken breast.
Step 11
Bake for 20 to 25 minutes - or until the chicken reaches an internal temperature of 165 degrees F.
